56 ON THE COVER: The Load Factor
With nearly 20 million fewer airline seats available in the United States this quarter compared with a year ago, planners clearly face challenges in bringing attendees to meetings. In this special report, M&C spotlights the crisis in airlift, its impact on lodging and host cities, and strategies to make the best out of a bad situation.

49 Remote Control
Just as travel costs are rising, the effectiveness of virtual site selection is improving significantly. While nothing can quite replace a physical visit, enhanced technology coming to properties’ websites allows meeting planners to accomplish much groundwork without leaving home.

69 Shades of Green
While an increasing number of hotels are calling themselves “green,” their claims are clouded by a thicket of different rating systems. Here is an in-depth look at some of the most common standards, from Energy Star to LEED, and how planners can use them to assess and compare properties’ eco-worthiness.

83 Green Beans
Bold steps taken by the Specialty Coffee Association of America to create a carbon-neutral conference can serve as a model for other groups looking to become more environmentally responsible.

87 Neat Eats
The Institute of Culinary Education prepared some delectable hors d’oeuvres for M&C to rate by taste, manageability while juggling a drink, and the dreaded dribble factor.

93 Foodie Cities
Presenting eight major meeting meccas — including Chicago, New Orleans and San Francisco — whose native food culture and great dining spots make them delicious destinations.

In Singapore, it was the messy but mind-blowing chili crab at East Coast Seafood. In Morocco, a surprisingly gorgeous lamb tagine at a food stall in a tiny spit of a town. In New Orleans, the meal at Stella and the controlled chaos of breakfast at Mother’s. I admit: I can’t always recall the details of even the most beautiful ballrooms I’ve seen, but a great meal? Down to the dessert.

This month we feature two food-inspired articles. First, associate editor Jennifer Dienst puts finger foods to the test in “Neat Eats” on page 87. A sometime student of New York’s Institute of Culinary Education, Dienst challenged chef James Briscione (late of Daniel) to create reception-ready hors d’oeuvres that are delicious and easy to eat (she puts them to both the taste and lipstick tests). We sent photographer Judd Pilossof along to capture images of these creative and pass-perfect foods. ...
